Recipe: Spiced Parsnip Soup
Warm up this season with Aqua's spiced parsnip soup, a wholesome delight, perfect for the cold winter nights.
This recipe will make 4 big portions.

Ingredients
3 medium sized parsnips
1 medium sized potato
1 medium sized shallot
1 large garlic clove
1/2 teaspoon cumin powder
750 millilitres hot water
4 tablespoons creme fraiche
1 teaspoon salt
4 slices of bread or bread rolls
Method
Get all your equipment ready and your ingredients weighed and chopped ready
1) Peel, top and tail the parsnips & cut each parsnip into 6
2) Peel the potato and cut into the same size as the parsnips
3) Peel, top and tail the shallot then chop very finely
4) Add the vegetable oil to a medium sized sauce pan and add the shallot and the garlic and fry on a medium heat for two to three minutes then crush the garlic with the back of you knife and add it to the shallot, then add the cumin and fry for a further one minute
5) Add the parsnip, potato and hot water to the sauce pan, bring to the boil and reduce
6) Add the salt and cook the soup out for 30 minutes or until the potato and parsnips are soft
8) Using your kitchen aid or hand blender then blend the soup until smooth
9) Taste the soup for seasoning and add another pinch of salt if needed
10) Pour the soup into a warm soup bowl and spoon the creme fraiche into the centre of the soup
11) Serve with warm bread or warm bread rolls.
